Adorable, right? I’ve been obsessed with whoopie pies ever since I had a red velvet whoopie pie from Ralphs a few years ago. Yes, I just said Ralphs; the grocery store. So, when I saw the whoopie pie pan at Crate & Barrel while shopping for a friend’s wedding gift, I knew I had to have one for myself. A perfect excuse to buy it and the perfect motivation to make them! Recently, Crate & Barrel got a heart shaped pan in for Valentines – HOW PERFECT! I bought them both and got going with my baking. I used this recipe, changing it around a bit to make it less bad for you and a little healthy.  Who am I kidding, it’s probably still not healthy but at least it’s not as bad :] I used fat free sour cream, I Can’t Believe It’s Not Butter and Splenda in place of the sugar. Oh and I also sifted the dry ingredients about 4 times to make sure the Red Velvet would indeed be velvetty. For the frosting, I attempted to use fat free cream cheese and Splenda but like many other healthy bakers have experienced, my frosting was too runny :( after four attempts, I threw a mini fit and bought the Pilsbury frosting (Yeah, I could have bought the regular full fat ingredients but I was exhausted and frustrated so I’m sorry in advance that the frosting is a bit deceiving). Anyway, here’s a few more shots of the behind the scenes action ;p
